This is an heirloom recipe passed down to Chef Tushar from his mother. His maternal family is from the Malvan coast in India. It carries memories of the coast, reflections of the seaside and a lifetime of love and nurturing.
Caramelized onions, grated and roasted coconut, slow cooked with freshly ground herbs and spices from this sleepy coastal town create deliciously aromatic gravy for your protein or veggies to be simmered in gently. Garnish with fresh cilantro and a squeeze of lime, serve over a bowl of rice or soak up with some bread. Think palm trees and sunsets on the beach in Southern India.
The Indian Pantry Simmering sauces are easy to use! Simmer one pound of sautéed protein or veggies in this gravy for a few minutes, add some water or coconut milk and cook over a slow flame until the dish gives off a delicious aroma and the ingredients are cooked through. Taste the curry for salt and flavor balance. Serve hot over rice, or with a roti or bread!
