This is a staple of North Indian cuisine and has an amazing, comforting flavor! Our recipe is a combination of a few of our fave versions from around the world. Made using fresh tomatoes, butter, cream and our freshly roasted and ground masalas, this rich gravy can be combined with meat, veggies, protein and tastes best with a squeeze of lime and a deliciously toasted naan bread or roti.
Roast or pan fry one pound of cottage cheese, veggies, tofu or chicken, add half a cup of warm water to the pan and simmer with the sauce till heated through and the sauce is creamy. Garnish with a squeeze of lemon, fresh cilantro and a smear of cream or butter. Serve with cumin rice or toasted naan.
